Pan fried Salmon, minted potato, sweetcorn and spring onion puree, feta cheese,cumin brocolli
So tonight i cooked my first dish at home for my blog. If i was gonna be technical i cooked a whole load of things at work today but none of which were my own dishes… I did however make a raisin and whiskey jam to go with cheese?
Im not really a fan of salmon but my lovely girlfriend really likes it so i cooked it for her tonight.
Serves 2
Salmon
2 x Salmon fillets
Salt and pepper
Cumin brocoli
about 10 brocoli florets
Sprinkling of cumin seeds
Sweetcorn Puree
200g Sweetcorn (frozen or from kernels)
3 Spring onions
Knob of butter
150ml whole milk
Salt and pepper
Minted Potato
About 10 new potatoes, not too waxy a variety
Knob of butter
Handful of fresh mint
Salt and Pepper
Service ingredients
A small amount of crumbed feta, ideally oak ages.
Right to do it…
- First cook the potatoes. Put the potatoes in a pan of cold water and bring to the boil, add salt and reduce the heat and cook until you can just about stick a knife through. Toss the spuds in the butter and olive oil and saute in a frying pan ready to serve
- Put the sweetcorn in a pan with the milk, cook on a low heat until the sweetcorn is cooked or warmed through. Add the spring onions and the butter and cook for a few more minutes. blitz the mix and then Pass the sweetcorn through a sieve into a clean pan and warm though gently ready to serve. Add salt and pepper
- Put the broccoli florets into a pan of boiling salted water. Once the water comes back up the boil remove from the water and cool down quickly ideally with ice and water or with cold water if not. Toss the broccoli with the cumin seeds, olive oil and salt and pepper. If you have a char grill or barbecue handy then reserve to cook on this. If not cook them in a medium to hot frying pan.
- For the salmon simply heat a small frying pan to high heat, add butter then the seasoned salmon. Once crispy either cover and lower the heat or stick it in the oven on about 180oC
- So now basically do some snazzy art work with the puree and place the potatoes and broccoli around it before placing the salmon fillet on the plate. Crumb the feta on and then drizzle a little of the butter from the salmon pan.
